Dans Les Herbes

In the weeds,
dans le merde…

In restaurants from
Mickey D’s to Le Bernardin,
they know what it means.

It can happen because of too many customers, or
you may know exactly who caused it
sometimes even before they do.

One can fall in, or start in.
The best day
can go to shit
over one bad plate,
one burned sauté.

Once you’re in, all you can do
is put your head down
and work like hell.
You might get out, you might not.

Some get scared, some get mad
some go to the bathroom
and never come back.
But everyone will
get caught by the beast.
